Vegetarian Chili



Ingredients

2 tablespoons olive oil
½ cup onion
4 cloves garlic, minced
1 green bell pepper, diced
1 zucchini, diced
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon oregano
1 15-ounce can pinto beans
1 15-ounce can black beans
1 15-ounce can garbanzo beans
1 15-ounce can tomato sauce
Grated cheddar cheese (optional)

Instructions
1.       Heat olive oil in saucepan.  Saute onion, garlic, green pepper, and zucchini for 5 minutes.
2.       Add remaining ingredients. Simmer for 30 minutes to combine flavors.
***This may be served over a bed of rice or a potato.
